Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot), casings removed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can tomato sauce
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb packaged potato gnocchi (shelf-stable)
- 4 cups broccoli florets (about 1 head)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
Step 2
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain any excess grease.
Step 3
Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
Step 4
Stir in diced tomatoes (with their juice), tomato sauce, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
Step 5
Remove skillet from heat. Stir in the uncooked gnocchi and broccoli florets until well combined with the sauce.
Step 6
Pour the mixture into the prepared baking dish. Sprinkle evenly with mozzarella and Parmesan cheeses.
Step 7
Bake for 20-25 minutes, or until the gnocchi are tender, broccoli is crisp-tender, and the cheese is melted and bubbly. Let stand for a few minutes before serving.
Tips
- For a bit of spice, use hot Italian sausage or add a pinch of red pepper flakes to the sauce.
- If you don't have broccoli, spinach or chopped bell peppers would also be delicious additions.
- Don't worry about boiling the gnocchi first; they'll cook perfectly in the sauce as they bake.
