- 1 lb cherry or grape tomatoes
- 8 oz block feta cheese
- 1/2 cup olive oil, plus more for drizzling
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 12 oz pasta (such as fusilli, rigatoni, or orecchiette)
- Fresh basil leaves, for garnish

Step 1
Preheat your oven to 400°F (200°C).
Step 2
In a 9x13 inch baking dish, add the cherry tomatoes, garlic, red pepper flakes (if using), oregano, salt, and pepper. Drizzle with 1/4 cup of the olive oil and toss to combine.

Place the block of feta cheese in the center of the baking dish, nestled amongst the tomatoes. Drizzle the remaining 1/4 cup of olive oil over the feta.

Bake for 25-30 minutes, or until the tomatoes have burst and the feta is soft and lightly golden. While it bakes, cook the pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

Remove the baking dish from the oven. Use a fork or spoon to gently mash the feta into the burst tomatoes, creating a creamy sauce. Stir in the drained pasta, adding a splash of reserved pasta water if needed to reach your desired consistency.
