- 1 block (8 oz / 200g) feta cheese
- 1 pint cherry or grape tomatoes
- 1 red bell pepper, cored and chopped
- 1 small zucchini, chopped
- 3 cloves garlic, smashed but kept whole
- 1/4 cup olive oil
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 10-12 oz pasta (penne, farfalle, or rotini)
- 1/4 cup fresh basil leaves, chopped, for garnish
Preparation
Step 1
Preheat oven to 400°F (200°C).
Step 2
Place the block of feta cheese in the center of a 9x13 inch baking dish. Arrange cherry tomatoes, chopped bell pepper, zucchini, and smashed garlic around the feta.
Step 3
Drizzle everything generously with olive oil. Sprinkle with oregano, salt, and black pepper. Toss vegetables lightly to coat.
Step 4
Bake for 25-30 minutes, or until tomatoes have burst and vegetables are tender, and feta is soft and slightly golden.
Step 5
While the feta and veggies bake, cook pasta according to package directions in salted water. Reserve 1/2 cup of pasta water before draining.
Step 6
Carefully remove the baking dish from the oven. Using a fork, mash the roasted feta, tomatoes, and garlic together to create a creamy sauce. Stir in the roasted bell pepper and zucchini.
Step 7
Add the drained pasta to the baking dish. Toss to coat evenly with the sauce. If the sauce is too thick, add a splash or two of the reserved pasta water until desired consistency is reached.
Step 8
Garnish with fresh chopped basil and serve immediately.
