- 1/2 red onion, finely diced
- 1 clove garlic, minced
- 1 1/2 cups vegetable broth
- 1 cup instant (or quick-cooking) couscous
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes (or halved cherry tomatoes)
- 1/4 cup chopped Kalamata olives
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped (optional)
- 1 tbsp lemon juice
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a medium pot with a lid over medium heat. Add red onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
Step 2
Pour in vegetable broth and bring to a boil. Once boiling, remove the pot from the heat and stir in the instant couscous. Cover tightly with the lid and let sit for 5 minutes, allowing the couscous to absorb the liquid.
Step 3
Fluff the couscous with a fork. Add diced cucumber, diced tomatoes, chopped Kalamata olives, crumbled feta cheese, fresh parsley, fresh dill (if using), and lemon juice to the pot.
Step 4
Stir everything together until well combined. Season with salt and black pepper to taste.
Step 5
Serve warm or at room temperature as a light meal or a flavorful side dish.
