- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 8 ounces cremini mushrooms, sliced
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1.5 cups milk (dairy or non-dairy)
- 8 ounces short pasta (penne, rotini, or farfalle)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

Add sliced mushrooms and chopped onion to the same pot. Sauté for 5-7 minutes until mushrooms are browned and onions are softened. Stir in minced garlic and cook for another minute until fragrant.

Return the chicken to the pot. Pour in the chicken broth and milk. Add the uncooked pasta, Italian seasoning, salt, and pepper. Stir everything together.

Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
Step 5
Remove from heat. Stir in the grated Parmesan cheese and fresh spinach until the spinach wilts and the sauce is creamy. Taste and adjust seasoning as needed.
Step 6
Garnish with fresh parsley, if using, and serve hot.
