- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika (optional)
- Salt and black pepper to taste
- 4 large eggs (optional, for serving)

Preparation
Step 1
Heat olive oil in a large non-stick skillet or cast-iron pan over medium-high heat. Add the diced sweet potato and cook, stirring occasionally, for 8-10 minutes, until starting to soften and brown.
