- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- Fresh parsley or cilantro, chopped, for garnish (optional)

Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

In a medium bowl, toss the diced sweet potatoes with 1 tbsp olive oil, smoked paprika, dried oregano, garlic powder, salt, and black pepper. Spread them in a single layer on one half of the prepared baking sheet.
