- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 1 cup long-grain white rice, rinsed
- 4 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon (optional, for depth)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Step 2
Stir in minced garlic, oregano, cumin, and cinnamon (if using). Cook for 1 minute until fragrant.

Add rinsed lentils and rice to the pot, stirring to coat them with the spices and oil.

Pour in the vegetable broth and diced tomatoes (with their liquid). Bring the mixture to a boil, then reduce heat to low, cover tightly, and simmer for 20-25 minutes.
Step 5
Do not lift the lid during simmering! After 20-25 minutes, check if all liquid has been absorbed and the lentils and rice are tender. If not, re-cover and cook for a few more minutes.
Step 6
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Season with salt and pepper to taste.
Step 7
Garnish with fresh chopped parsley and serve with lemon wedges for a bright finish.
