It's a vibrant, protein-packed salad that's incredibly simple to throw together, making it perfect for meal prep or a quick midday bite. Brimming with crunchy veggies, tangy feta, and a zesty lemon-herb dressing, it’s a delightful burst of Mediterranean sunshine in every forkful.

Ingredients

Yield: 4 servings

Salad

  • 2 (15 oz) cans chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup crumbled feta cheese

Lemon-Herb Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (or 1/2 tsp dried)
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

For Serving (optional)

  • Pita bread or pita chips
  • Lettuce cups
  • Extra feta or fresh herbs

Preparation

  1. Step 1

In a large bowl, combine the rinsed and drained chickpeas, diced cucumber, finely diced red onion, halved cherry tomatoes, halved Kalamata olives, and crumbled feta cheese.

  2. Step 2

Prepare the dressing: In a small bowl, whisk together olive oil, fresh lemon juice, chopped parsley, chopped dill, minced garlic, dried oregano, salt, and black pepper until well combined.

  3. Step 3

Pour the dressing over the chickpea mixture in the large bowl. Toss gently to ensure all ingredients are evenly coated with the dressing.

  4. Step 4

Taste and adjust seasonings as needed. Serve immediately, or cover and refrigerate for at least 30 minutes to allow the flavors to meld. This salad is even better after a short chill.

  5. Step 5

Serve as desired: enjoy on its own, with pita bread or pita chips, in lettuce cups, or as a side dish.

Tips

  • For a creamier texture, mash about a quarter of the chickpeas before adding them to the salad.
  • This salad holds well in the refrigerator for 3-4 days, making it perfect for meal prepping your lunches.
