Ingredients

Yield: 4 servings

Chickpea Salad

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1/2 red onion, finely diced
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup fresh parsley, chopped

Lemon Herb Dressing

  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Serving

  • 4 cups mixed greens or chopped romaine lettuce
  • Feta cheese, crumbled (optional)
  • Warm pita bread or whole-wheat tortillas (optional)

Preparation

  1. Step 1

In a large bowl, combine the rinsed and drained chickpeas. Lightly mash about half of the chickpeas with a fork or potato masher to create a creamier texture while still leaving some whole.

  2. Step 2

Add the finely diced red onion, diced cucumber, halved cherry tomatoes, halved Kalamata olives, and chopped fresh parsley to the bowl with the chickpeas.

  3. Step 3

In a small bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper for the dressing until well combined.

  4. Step 4

Pour the dressing over the chickpea and vegetable mixture. Toss gently to coat everything evenly. Taste and adjust seasonings as needed.

  5. Step 5

To serve, divide the mixed greens or romaine lettuce among four bowls. Spoon a generous amount of the Mediterranean chickpea salad over the greens. If desired, sprinkle with crumbled feta cheese and serve with warm pita bread or tortillas.

Tips

  • Lightly mashing some of the chickpeas helps bind the salad together without needing mayonnaise.
  • For a spicier kick, add a pinch of red pepper flakes to the dressing.
  • This chickpea salad is fantastic for meal prep; store the salad and greens separately, then combine just before eating.
