- 1/4 cup fresh parsley, chopped
Lemon Herb Dressing
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
For Serving
- 4 cups mixed greens or chopped romaine lettuce
- Feta cheese, crumbled (optional)
- Warm pita bread or whole-wheat tortillas (optional)
Preparation
Step 1
In a large bowl, combine the rinsed and drained chickpeas. Lightly mash about half of the chickpeas with a fork or potato masher to create a creamier texture while still leaving some whole.

Add the finely diced red onion, diced cucumber, halved cherry tomatoes, halved Kalamata olives, and chopped fresh parsley to the bowl with the chickpeas.

In a small bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper for the dressing until well combined.
