For the Bowls

  • 2 (15-oz) cans chickpeas, rinsed and drained
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, halved or whole
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • 4 cups cooked quinoa or couscous (optional, for a heartier meal)
  • Mixed greens or spinach (optional, for a bed)

For the Lemon-Herb Dressing

  • ¼ cup olive oil
  • 3 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Preparation

  1. Step 1

    Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

    In a large bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and chopped fresh parsley.
