- 2 (15 oz) cans chickpeas, rinsed and drained
- 1 large cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, finely diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped (optional)
Lemon-Herb Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and black pepper to taste
Preparation
Step 1
In a large bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, finely diced red onion, halved Kalamata olives, crumbled feta (if using), chopped parsley, and chopped mint (if using).
