  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 (15 oz) cans chickpeas, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ cup fresh lemon juice
  • 5 oz fresh spinach or kale, roughly chopped
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Crusty bread, for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook for 8-10 minutes, stirring occasionally, until vegetables are softened.

    Add the minced garlic, dried oregano, and dried thyme. Cook for 1 minute more until fragrant.

  3. Step 3

    Pour in the vegetable broth, rinsed chickpeas, and diced tomatoes (with their juice). Bring the soup to a simmer. Reduce heat to low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld.

    Stir in the fresh lemon juice and chopped spinach or kale. Cook for another 2-3 minutes, or until the greens have wilted.

    Taste and adjust seasoning with salt and freshly ground black pepper as needed.

  6. Step 6

    Ladle the soup into bowls, garnish with fresh parsley, and serve hot with crusty bread, if desired.
