  • 1 lb Italian sausage (mild or spicy), casings removed
  • 3 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • Red pepper flakes, for serving (optional)

Preparation

  1. Step 1

    Cook rotini pasta according to package directions until al dente. Drain and set aside.

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 7-9 minutes. Drain any excess grease.

    Add minced garlic to the skillet and cook for 1 minute until fragrant (do not burn).

    Stir in broccoli florets and chicken broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, or until broccoli is tender-crisp.

    Add the cooked rotini and Parmesan cheese to the skillet. Toss to combine, ensuring everything is well coated. Season with salt and pepper to taste.

    Serve hot, with extra Parmesan cheese and a sprinkle of red pepper flakes, if desired.
