- 1 tbsp olive oil
- 1 lb Italian sausage (sweet or spicy), casings removed
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken or vegetable broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1 head broccoli, cut into small florets
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
Preparation
Step 1
Cook pasta according to package directions. Before draining, reserve 1/2 cup of pasta water. Drain pasta and set aside.

While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain off excess fat, if any, and transfer sausage to a plate.

Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

Stir in diced tomatoes (undrained), chicken broth, oregano, and red pepper flakes (if using). Bring to a simmer, then add the broccoli florets. Cover and cook for 5-7 minutes, or until broccoli is tender-crisp.
Step 5
Return cooked sausage to the skillet. Stir in the cooked pasta and Parmesan cheese. Toss until everything is well combined and coated in the ragu. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.

Season with salt and black pepper to taste. Serve warm, topped with extra Parmesan cheese.
