  • 1 tbsp olive oil
  • 1 lb Italian sausage (sweet or hot), casings removed
  • 1 head broccoli, cut into small florets
  • ½ cup chicken broth
  • 1 clove garlic, minced
  • 1 (16 oz) package potato gnocchi (shelf-stable)
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes, optional, for serving

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage, breaking it up with a spoon, and cook until browned and no longer pink, about 7-8 minutes. Drain off any excess fat.

    Add broccoli florets to the skillet with the sausage. Cook, stirring occasionally, for 3-4 minutes until broccoli starts to brighten and soften slightly.

    Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and bring to a simmer.

    Add the gnocchi to the skillet. Stir gently, cover, and cook for 5-7 minutes, stirring once or twice, until gnocchi are tender and have absorbed most of the liquid.

    Remove from heat. Stir in Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

    Serve immediately, garnished with additional Parmesan cheese and red pepper flakes, if desired.
