Hearty Chicken Noodle Soup

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1/2-inch pieces
  • 1 large carrot, peeled and diced
  • 2 celery stalks, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup water
  • 1/2 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 2 bay leaves
  • 1.5 cups egg noodles
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or soup pot over medium heat. Add diced chicken and cook until lightly browned, about 5-7 minutes. Remove chicken from the pot and set aside.

    Add carrot, celery, and onion to the pot. Sauté for 5-7 minutes until vegetables begin to soften. Stir in minced garlic and cook for 1 minute more until fragrant.

    Pour in chicken broth and water. Add dried thyme, dried rosemary, and bay leaves. Bring the mixture to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes to allow flavors to develop.

    Stir in the cooked chicken and egg noodles. Continue to simmer for another 8-10 minutes, or until the noodles are tender and cooked through.

  5. Step 5

    Remove bay leaves. Stir in fresh parsley. Taste and season with salt and freshly ground black pepper as needed.

  6. Step 6

    Ladle hot soup into bowls and serve. Perfect with a crusty piece of bread!

Tips

  • For even more flavor, use homemade chicken broth.
  • If you're making a big batch, cook the noodles separately and add them to individual bowls to prevent them from getting too soggy if you have leftovers.
