There's nothing quite like a warm bowl of Chicken Noodle Soup to soothe the soul! This recipe is packed with tender chicken, wholesome vegetables, and hearty noodles, all swimming in a savory, aromatic broth. It’s incredibly easy to make from scratch, and it's guaranteed to become your new favorite comfort food whenever you need a little hug in a bowl.
Ingredients
Yield: 6 servings
Main
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1/2-inch pieces
- 1 large carrot, peeled and diced
- 2 celery stalks, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup water
- 1/2 tsp dried thyme
- 1/4 tsp dried rosemary
- 2 bay leaves
- 1.5 cups egg noodles
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Heat olive oil in a large Dutch oven or soup pot over medium heat. Add diced chicken and cook until lightly browned, about 5-7 minutes. Remove chicken from the pot and set aside.
Step 2
Add carrot, celery, and onion to the pot. Sauté for 5-7 minutes until vegetables begin to soften. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 3
Pour in chicken broth and water. Add dried thyme, dried rosemary, and bay leaves. Bring the mixture to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes to allow flavors to develop.
Step 4
Stir in the cooked chicken and egg noodles. Continue to simmer for another 8-10 minutes, or until the noodles are tender and cooked through.
Step 5
Remove bay leaves. Stir in fresh parsley. Taste and season with salt and freshly ground black pepper as needed.
Step 6
Ladle hot soup into bowls and serve. Perfect with a crusty piece of bread!
Tips
- For even more flavor, use homemade chicken broth.
- If you're making a big batch, cook the noodles separately and add them to individual bowls to prevent them from getting too soggy if you have leftovers.
