  • 2 tbsp olive oil
  • 1 lemon, half juiced, half thinly sliced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste

For Serving (Optional)

  • Cooked quinoa or rice
  • Fresh parsley or dill, chopped

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the thoroughly dried chickpeas and broccoli florets. Add olive oil, lemon juice, garlic powder, smoked paprika, oregano, red pepper flakes (if using), salt, and pepper. Toss well to ensure everything is evenly coated.

    Spread the seasoned chickpeas and broccoli in a single layer on the prepared baking sheet. Scatter the thinly sliced lemon halves over the vegetables.

  4. Step 4

    Roast for 20-25 minutes, flipping halfway through, until the broccoli is tender-crisp and the chickpeas are golden and slightly crispy.

  5. Step 5

    Remove from oven. Discard lemon slices. Taste and adjust seasonings if needed. Serve hot, perhaps over cooked quinoa or rice, garnished with fresh herbs.
