- 1 (8 oz) block halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, cored and cut into 1-inch pieces
- 1 yellow bell pepper, cored and cut into 1-inch pieces
- 1 red onion, cut into 1-inch wedges
- 1 zucchini, cut into 1/2-inch thick half-moons
- 10-12 cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh parsley or mint, for garnish (optional)
- Wooden or metal skewers (if using wooden, soak for 30 minutes)
Preparation
Step 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill or grill pan to medium-high heat.
Step 2
In a large bowl, combine the halloumi cubes, bell peppers, red onion, zucchini, and cherry tomatoes. Drizzle with olive oil and lemon juice. Sprinkle with oregano, garlic powder, salt, and pepper. Toss gently to coat all the ingredients evenly.
Step 3
Thread the halloumi and vegetables alternately onto the skewers. Don't pack them too tightly, allowing a little space for even cooking.
Step 4
Place the skewers on the preheated grill or grill pan. Cook for 2-3 minutes per side, turning occasionally, until the halloumi is golden brown with nice grill marks and the vegetables are tender-crisp.
Step 5
Remove from grill and let rest for a couple of minutes. Garnish with fresh parsley or mint if desired. Serve warm.
