- 1 (15 oz) can chickpeas, rinsed and drained
- 1/2 cup vegetable broth
- 1/4 cup full-fat coconut milk (canned, not refrigerated carton)
- 4-5 oz fresh spinach
- Juice of 1/2 lime or lemon
- Salt and black pepper to taste
- Fresh cilantro, chopped, for garnish (optional)
- Cooked rice or naan bread for serving (optional)
Preparation
Step 1
Heat olive oil in a large skillet or non-stick pan over medium heat. Add diced onion and cook for 3-5 minutes until softened and translucent.
