  • 1/4 tsp turmeric powder
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/2 cup vegetable broth
  • 1/4 cup full-fat coconut milk (canned, not refrigerated carton)
  • 4-5 oz fresh spinach
  • Juice of 1/2 lime or lemon
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)
  • Cooked rice or naan bread for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or non-stick pan over medium heat. Add diced onion and cook for 3-5 minutes until softened and translucent.

    Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant. Add curry powder, cumin, and turmeric, stirring constantly for 30 seconds to toast the spices.
