Golden Curried Cauliflower Steaks

Move over, meat! These Golden Curried Cauliflower Steaks are here to prove that vegetables can be the star of the show. Sliced thick, seasoned with a warm curry blend, and roasted until tender-crisp and beautifully caramelized, they make for an impressive yet incredibly easy vegetarian main. Serve them with rice or a dollop of yogurt for a complete and satisfying meal.

Ingredients

Yield: 2 servings

Main

  • 1 large head of cauliflower
  • 2 tbsp olive oil
  • 1 tbsp curry powder
  • 1/2 tsp garlic powder
  • 1/4 tsp ground turmeric
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)
  • Yogurt or chutney, for serving (optional)

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Step 2

Prepare the cauliflower: Carefully remove the outer leaves from the cauliflower. With the stem end on your cutting board, cut the cauliflower into 3/4 to 1-inch thick 'steaks' from the center. You should get 2-3 good steaks; the remaining florets can be roasted alongside or saved for another meal.

  3. Step 3

In a small bowl, whisk together the olive oil, curry powder, garlic powder, turmeric, salt, and pepper.

  4. Step 4

Place the cauliflower steaks on the prepared baking sheet. Using a brush or your hands, generously coat both sides of the cauliflower steaks with the seasoned olive oil mixture.

  5. Step 5

Roast for 20-25 minutes, flipping halfway through, until the cauliflower is tender and deeply golden brown and slightly caramelized at the edges. Cooking time may vary depending on the thickness of your steaks.

  6. Step 6

Serve hot, garnished with fresh cilantro if desired, and a dollop of plain yogurt or a side of mango chutney.

Tips

  • Ensure your cauliflower steaks are thick enough to hold together; cutting through the core helps.
  • If you cut extra florets, toss them with the same seasoning and roast alongside, they make a great snack!
  • For a spicier kick, add a pinch of cayenne pepper to the spice blend.
