- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/4 tsp red pepper flakes (optional, for heat)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (13.5 oz) full-fat coconut milk
- 1 can (15 oz) chickpeas, rinsed and drained
- 5 oz fresh spinach
- 1/2 tsp salt, or to taste
- Optional: Fresh cilantro, chopped, for garnish
- Optional: Cooked basmati rice or naan, for serving
Preparation
Step 1
Heat oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook for 5-7 minutes until softened and translucent.
Step 2
Add minced garlic, grated ginger, curry powder, cumin, turmeric, and red pepper flakes (if using). Cook for 1 minute, stirring constantly, until fragrant.
Step 3
Pour in the diced tomatoes (with their juice) and coconut milk. Stir well to combine. Bring the mixture to a gentle simmer.
Step 4
Add the rinsed and drained chickpeas to the pot. Reduce heat to medium-low, cover, and let simmer for 10-12 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Step 5
Stir in the fresh spinach a handful at a time, allowing each batch to wilt before adding more. Continue stirring until all the spinach has wilted into the curry.
Step 6
Taste and season with salt as needed. Serve hot, garnished with fresh cilantro if desired, alongside basmati rice or warm naan bread.
Tips
- For a creamier curry, blend a small portion of the chickpeas and sauce before adding the rest of the chickpeas.
- Add other vegetables like bell peppers, zucchini, or sweet potatoes for extra bulk and nutrition. Add them with the onions to cook until tender.
