Ingredients
Yield: 4 servings
Main
- 1 tbsp coconut oil or olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper (optional)
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (13.5 oz) can full-fat coconut milk
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 cups mixed vegetables (e.g., chopped bell peppers, zucchini, green beans)
- Salt and black pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Preparation
Step 1
Heat coconut oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 5-7 minutes until softened.
Step 2
Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
Step 3
Add the curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 1-2 minutes, stirring constantly, until the spices are very fragrant.
Step 4
Pour in the diced tomatoes (with their juices) and coconut milk. Stir well to combine. Bring to a gentle simmer.
Step 5
Add the rinsed chickpeas and mixed vegetables. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are tender. Season with salt and black pepper.
Step 6
Serve hot, garnished with fresh cilantro, alongside cooked rice or warm naan bread.
Tips
- Adjust the cayenne pepper to your preferred spice level.
- Feel free to use any seasonal vegetables you have on hand, like sweet potatoes or cauliflower.
- For a creamier texture, mash a portion of the chickpeas against the side of the pot.
