  • 1 tbsp coconut oil or olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper (optional)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 2 cups mixed vegetables (e.g., chopped bell peppers, zucchini, green beans)
  • Salt and black pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Preparation

  1. Step 1

    Heat coconut oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 5-7 minutes until softened.

    Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.

    Add the curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 1-2 minutes, stirring constantly, until the spices are very fragrant.

    Add the rinsed chickpeas and mixed vegetables. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are tender. Season with salt and black pepper.
