Easy Lentil & Tomato Soup

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 (28 oz) can crushed tomatoes
  • 1 cup brown or green lentils, rinsed well
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Crusty bread for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or pot over medium heat. Add chopped onion, carrots, and celery. Cook, stirring occasionally, until vegetables are softened, about 7-10 minutes.

    Stir in minced garlic, dried thyme, and dried rosemary. Cook for 1 minute until fragrant.

  3. Step 3

    Add crushed tomatoes, rinsed lentils, vegetable broth, and bay leaf to the pot. Stir to combine. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.

  4. Step 4

    Remove the bay leaf. Taste the soup and season generously with salt and black pepper as needed. For a slightly thicker soup, you can mash some of the lentils against the side of the pot with a spoon.

  5. Step 5

    Serve hot, garnished with fresh parsley and a side of crusty bread, if desired.

Tips

  • For a creamier texture, blend about 1-2 cups of the soup (after removing the bay leaf) then return it to the pot.
  • Add a handful of spinach or kale during the last 5 minutes of cooking for extra greens.
  • A squeeze of lemon juice at the end can brighten up all the flavors.
