Warm, comforting, and incredibly easy to make, this Easy Lentil and Spinach Curry is a true weeknight champion!   • 1 tablespoon olive oil or coconut oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated (about 1 teaspoon)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 cup brown or green lentils, rinsed well
  • 2 cups vegetable broth
  • 5 ounces fresh spinach
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.

  2. Step 2

    Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant. Add the ground cumin, coriander, turmeric, and cayenne pepper (if using). Stir and cook for another minute until spices are fragrant.

  3. Step 3

    Pour in the diced tomatoes, coconut milk, rinsed lentils, and vegetable broth. Stir well to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.

  4. Step 4

    Stir in the fresh spinach and cook for 2-3 minutes, until wilted. Season with salt and freshly ground black pepper to taste. If the curry is too thick, add a little more vegetable broth or water.

  5. Step 5

    Serve hot, garnished with fresh chopped cilantro, alongside basmati rice or warm naan bread.
