- 1 small onion, chopped

- 2 (15-oz) cans black beans, rinsed and drained
- 1 (15-oz) can pinto beans, rinsed and drained
- 1 (10-oz) can mild red enchilada sauce
- 1/2 cup water
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 8-10 (8-inch) flour tortillas
- 2 cups shredded Monterey Jack or cheddar cheese

Preparation
Step 1
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Step 2
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.

Stir in black beans, pinto beans, enchilada sauce, water, chili powder, cumin, and salt. Bring to a simmer, then reduce heat and cook, stirring occasionally, for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly. You can mash some of the beans with the back of a spoon for a creamier texture, if desired.

Spread about 1/2 cup of the bean mixture evenly over the bottom of the prepared baking dish. Top with a single layer of tortillas (trimming to fit as needed, or overlapping slightly).

Spread about 1 cup of the bean mixture over the tortillas, then sprinkle with about 1/2 cup of shredded cheese. Repeat layers: tortillas, bean mixture, cheese, ending with a layer of tortillas topped with the remaining cheese.

Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through. If desired, you can broil for the last 1-2 minutes for extra browning on the cheese (watch carefully!).
