  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1 (15-ounce) can black beans, rinsed and drained
  • 8-12 small corn or flour tortillas
  • Desired toppings: avocado slices, quick pickled red onion, cilantro, cotija cheese, plain Greek yogurt or sour cream, salsa

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Step 2

    In a medium bowl, toss diced sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt until evenly coated. Spread in a single layer on the prepared baking sheet.

    Roast for 20-25 minutes, or until sweet potatoes are tender and slightly caramelized, flipping halfway through.

  4. Step 4

    While sweet potatoes roast, warm black beans in a small saucepan over medium-low heat or in the microwave until heated through. Alternatively, warm them in the skillet after the sweet potatoes are done.

  5. Step 5

    Warm tortillas according to package instructions (in a dry skillet, microwave, or oven).

  6. Step 6

    Assemble tacos: fill warmed tortillas with roasted sweet potatoes and black beans. Top with your favorite toppings and serve immediately.
