- 2 (15 oz) cans black beans, rinsed and drained
- 1 (15 oz) can corn, drained (or 1.5 cups frozen corn, thawed)
- 1 large bell pepper (any color), diced
- 1/2 red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1-2 ripe avocados, diced
- 4 cups cooked brown rice or quinoa (for serving)
- Optional: tortilla chips or greens for serving
For the Lime Vinaigrette
- 1/4 cup olive oil
- 3 tbsp fresh lime juice
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1/2 tsp ground cumin
- Salt and freshly ground black pepper to taste
Preparation
Step 1
In a large bowl, combine the rinsed black beans, corn, diced bell pepper, diced red onion, and chopped cilantro.

In a small bowl, whisk together the olive oil, lime juice, honey (or maple syrup), minced garlic, and cumin. Season with salt and pepper to taste.
