For the Bowls

  • 2 (15 oz) cans black beans, rinsed and drained
  • 1 (15 oz) can corn, drained (or 1.5 cups frozen corn, thawed)
  • 1 large bell pepper (any color), diced
  • 1/2 red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1-2 ripe avocados, diced
  • 4 cups cooked brown rice or quinoa (for serving)
  • Optional: tortilla chips or greens for serving

For the Lime Vinaigrette

  • 1/4 cup olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 tsp ground cumin
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    In a large bowl, combine the rinsed black beans, corn, diced bell pepper, diced red onion, and chopped cilantro.

  2. Step 2

    In a small bowl, whisk together the olive oil, lime juice, honey (or maple syrup), minced garlic, and cumin. Season with salt and pepper to taste.

    Pour the dressing over the black bean and corn mixture. Stir gently to combine everything well. Add the diced avocado and gently toss again.
