For the Burgers
- 1 (15 oz) can black beans, rinsed, drained, and patted very dry
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (any color)
- 2 cloves garlic, minced
- 1 large egg
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil (for cooking)
For the Spicy Aioli
- 1/2 cup mayonnaise
- 1-2 tbsp sriracha (or other hot sauce), to taste
- 1 tsp lime juice
- 1/2 clove garlic, minced (optional)
For Serving
- 4 burger buns
- Lettuce, tomato, avocado, red onion, pickles (your favorite toppings)
Preparation
Step 1
Prepare the spicy aioli: In a small bowl, whisk together mayonnaise, sriracha, lime juice, and minced garlic (if using). Taste and adjust spice level. Cover and refrigerate until serving.
Step 2
For the burgers: In a large bowl, mash the drained and very dry black beans with a fork or potato masher until mostly mashed but still with some texture.
Step 3
Add the breadcrumbs, red onion, bell pepper, minced garlic, egg, chili powder, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix thoroughly until well combined. The mixture should be firm enough to form patties.
Step 4
Divide the mixture into 4 equal portions and shape them into patties, about 3/4-inch thick. Make sure they are firm.
Step 5
Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Carefully place the black bean patties in the hot skillet. Cook for 5-7 minutes per side, or until golden brown and heated through. Alternatively, bake at 400°F (200°C) for 15-20 minutes, flipping halfway.
Step 6
