- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 (15 oz) cans black beans, rinsed and drained
- 1/2 cup vegetable broth (or water)
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 2 ripe avocados, diced or mashed
- Optional toppings: crumbled cotija cheese, salsa, sour cream or plain yogurt, chopped cilantro, pickled jalapeños

Step 1
If making homemade tostadas, preheat oven to 375°F (190°C). Brush corn tortillas lightly with oil and bake for 8-10 minutes, flipping halfway, until crisp and golden. (Skip this if using store-bought shells).

Heat olive oil in a medium skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in the rinsed black beans, vegetable broth, chili powder, cumin, and oregano. Bring to a simmer, then use a potato masher or the back of a spoon to lightly mash about half of the beans. This creates a creamy texture while leaving some whole beans.

Continue to simmer for 5-7 minutes, stirring occasionally, until the liquid has mostly absorbed and the beans are warm and flavorful. Season with salt and black pepper to taste.

To assemble, spread a generous layer of the warm black beans onto each tostada shell. Top with diced or mashed avocado and your favorite optional toppings.
