  • 1 large head cauliflower, cut into 3/4-inch thick 'steaks'
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Preparation

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    Carefully cut the cauliflower: Remove the outer leaves. Place the cauliflower stem-side down on a cutting board. Cut directly through the center to get two large 'steaks'. Then cut another 1-2 steaks from each half. Smaller florets that fall off can be roasted alongside the steaks.

    Arrange the cauliflower steaks and any florets on the prepared baking sheet in a single layer.

    Drizzle with olive oil, then sprinkle evenly with garlic powder, smoked paprika, salt, and black pepper. Rub the seasonings gently into the cauliflower.

    Roast for 15 minutes. Flip the cauliflower steaks, then sprinkle generously with Parmesan cheese. Return to the oven and roast for another 10-15 minutes, or until the cauliflower is tender and the edges are golden brown and crispy, and the Parmesan is melted and golden.

    Remove from oven. Garnish with fresh parsley if desired and serve immediately.
