- 2 tbsp olive oil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- Zest of 1 lemon
- 2 tbsp fresh parsley, chopped (for garnish)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, combine the thoroughly dried chickpeas with olive oil, oregano, thyme, garlic powder, salt, and pepper. Toss until the chickpeas are evenly coated.

Spread the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring not to overcrowd.

Roast for 20-25 minutes, or until golden brown and crispy. Halfway through baking, give the pan a shake to ensure even crisping. Keep a close eye on them to prevent burning.
