  • 2 (15 oz) cans chickpeas, rinsed, drained, and thoroughly dried
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped (for garnish)

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a medium bowl, combine the thoroughly dried chickpeas with olive oil, oregano, thyme, garlic powder, salt, and pepper. Toss until the chickpeas are evenly coated.

    Spread the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring not to overcrowd.

    Roast for 20-25 minutes, or until golden brown and crispy. Halfway through baking, give the pan a shake to ensure even crisping. Keep a close eye on them to prevent burning.

    Remove from oven. Immediately toss the hot chickpeas with lemon zest and chopped fresh parsley.

  6. Step 6

    Serve warm or at room temperature as a snack, salad topping, or side dish.
