  • 2 cans (15 oz each) chickpeas, rinsed, drained, and patted very dry
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Zest of 1 lemon

For the Bowls

  • 4 cups cooked quinoa or rice
  • 4 cups mixed greens or spinach
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced

For the Lemon-Tahini Dressing

  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp water (or more, to reach desired consistency)
  • 1 small clove garlic, minced
  • Pinch of salt

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a medium bowl, combine the drained and dried chickpeas with olive oil, oregano, garlic powder, salt, pepper, and lemon zest. Toss to coat evenly.

    While chickpeas roast, prepare the dressing: Whisk together all dressing ingredients in a small bowl until smooth. Add more water if needed to reach a pourable consistency.

    Assemble bowls: Divide cooked quinoa/rice among four bowls. Top with mixed greens, cucumber, cherry tomatoes, and red onion. Finish with the crispy chickpeas and a generous drizzle of lemon-tahini dressing.
