Ingredients
Yield: 4 servings
For the Halloumi
- 1 (8 oz) block halloumi cheese, sliced into ½-inch thick pieces
- 1 tbsp olive oil
For the Spiced Yogurt
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- ½ tsp ground cumin
- ¼ tsp smoked paprika
- 1 tbsp lemon juice
- 2 tbsp fresh mint or dill, chopped
- Salt and pepper to taste
For Assembly
- 4 pita breads
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion, thinly sliced
- Handful of fresh lettuce or spinach
Preparation
Step 1
Prepare the spiced yogurt: In a small bowl, combine Greek yogurt, minced garlic, cumin, smoked paprika, lemon juice, and chopped fresh mint or dill. Season with salt and pepper to taste. Stir well and set aside.
Step 2
Heat olive oil in a large non-stick skillet over medium heat. Add halloumi slices and cook for 3-4 minutes per side, until golden brown and crispy. Remove from heat.
Step 3
Warm the pita breads according to package instructions (microwave briefly, toast lightly, or warm in the same skillet for 30 seconds per side).
Step 4
Assemble the pitas: Spread a generous amount of spiced yogurt inside each warm pita. Fill with fresh lettuce or spinach, cherry tomatoes, cucumber, red onion, and several slices of crispy halloumi.
Step 5
Serve immediately and enjoy your vibrant, flavorful vegetarian meal!
Tips
- For extra crunch, lightly toast the pita breads before filling them.
- Add a sprinkle of red pepper flakes to the yogurt sauce for a little kick.
- Any crunchy vegetable works well here – try bell peppers or shredded carrots!
