For the Halloumi
- 2 (8 oz) blocks halloumi cheese, sliced into ½-inch thick pieces
- 1 tbsp olive oil
For the Herb Yogurt
- 1 cup plain Greek yogurt
- ¼ cup chopped fresh dill
- ¼ cup chopped fresh parsley
- 1 clove garlic, minced
- Juice of ½ lemon
- Salt and black pepper to taste
For Serving
- 4-6 pita breads
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- ½ red onion, thinly sliced
- Optional: fresh mint leaves, olives
Preparation
Step 1
Prepare the herb yogurt: In a small bowl, whisk together Greek yogurt, dill, parsley, minced garlic, and lemon juice. Season with salt and pepper to taste. Set aside.

Heat olive oil in a large non-stick skillet over medium heat. Add halloumi slices in a single layer (work in batches if necessary).

Cook halloumi for 3-5 minutes per side, until deeply golden brown and crispy. Transfer to a plate lined with a paper towel to drain excess oil.

Warm the pita breads according to package directions, either in the microwave, a dry skillet, or oven.

To assemble, spread a generous spoonful of herb yogurt inside each warm pita. Fill with crispy halloumi, chopped cucumber, tomatoes, and red onion. Add fresh mint or olives if using.

- Don't overcrowd the pan when cooking the halloumi; this ensures it gets crispy, not steamed.
