For the Bowls
- 1 cup cooked quinoa or farro
- 1 block (8 oz) halloumi cheese, sliced ½-inch thick
- 1 tbsp olive oil
- 1 cup chopped cucumber
- 1 cup halved cherry tomatoes
- ½ cup shredded carrots
- Handful of mixed greens or spinach
For the Lemon-Herb Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- ½ tsp garlic powder
- ¼ tsp salt
- Pinch of black pepper
Preparation
Step 1
Prepare your grain (quinoa, farro, etc.) according to package instructions. While it cooks, combine all dressing ingredients in a small bowl and whisk until emulsified. Set aside.

Pat halloumi slices dry with a paper towel. Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat. Add halloumi slices and cook for 2-3 minutes per side, until golden brown and crispy.
Step 3
Divide the cooked grain between two bowls. Arrange the mixed greens, cucumber, cherry tomatoes, and shredded carrots on top of the grains.
Step 4
Place the crispy halloumi slices on top of the vegetables. Drizzle generously with the lemon-herb dressing. Serve immediately.
