  • 1 (8 oz) block halloumi cheese, sliced into 1/4-inch thick pieces
  • 1 tbsp olive oil
  • 4-6 large flour tortillas or wholesome wraps
  • 1 cup shredded lettuce or mixed greens
  • 1/2 cucumber, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • Optional: 1/4 cup chopped fresh mint or dill

Creamy Dressing

  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Prepare the dressing: In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, oregano, salt, and pepper. Set aside.

    Heat olive oil in a large non-stick skillet over medium heat. Add halloumi slices in a single layer (cook in batches if necessary).
