Tired of the same old lunch or quick dinner? These Crispy Halloumi and Veggie Wraps are here to shake things up! Salty, squeaky halloumi gets perfectly crispy in a pan, then it's paired with fresh, crunchy vegetables and a creamy dressing, all tucked into a soft tortilla. It's a quick, flavorful, and incredibly satisfying vegetarian dish you'll want on repeat!
Ingredients
Yield: 4 servings
Main
- 1 (8 oz) block halloumi cheese, sliced into 1/4-inch thick pieces
- 1 tbsp olive oil
- 4-6 large flour tortillas or wholesome wraps
- 1 cup shredded lettuce or mixed greens
- 1/2 cucumber, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- Optional: 1/4 cup chopped fresh mint or dill
Creamy Dressing
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Prepare the dressing: In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, oregano, salt, and pepper. Set aside.
Step 2
Heat olive oil in a large non-stick skillet over medium heat. Add halloumi slices in a single layer (cook in batches if necessary).
Step 3
Cook halloumi for 3-4 minutes per side, or until golden brown and crispy. Remove from skillet and set aside.
Step 4
Warm tortillas briefly in the microwave or a dry skillet to make them more pliable.
Step 5
Assemble the wraps: Spread a spoonful of creamy dressing over each tortilla. Layer with shredded lettuce, cucumber, cherry tomatoes, and red onion.
Step 6
Top with crispy halloumi slices and a sprinkle of fresh mint or dill (if using). Fold in the sides of the tortilla, then roll up tightly to form a wrap.
Step 7
Serve immediately and enjoy!
Tips
- Don't overcrowd the pan when cooking the halloumi; this ensures it gets crispy and not steamed.
- Feel free to add other fresh veggies like bell peppers, shredded carrots, or Kalamata olives to your wraps.
