Looking for a meatless meal that doesn't skimp on flavor or satisfaction? You've found it! These Crispy Chickpea Tacos are ridiculously delicious, easy to make, and perfect for a fun taco night. The star? Perfectly spiced chickpeas roasted until golden and crunchy.

Ingredients

Yield: 4 servings

For the Crispy Chickpeas

  • 2 (15-oz) cans chickpeas, rinsed, drained, and patted very dry
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

For the Creamy Avocado Sauce

  • 1 ripe avocado, pitted and peeled
  • 1/4 cup plain Greek yogurt (or sour cream)
  • 1 tbsp lime juice, freshly squeezed
  • 1/4 cup fresh cilantro, chopped
  • 1-2 tbsp water (to thin, if needed)
  • Salt to taste

For Serving

  • 8-12 small corn or flour tortillas
  • Shredded lettuce or cabbage
  • Diced tomatoes or pico de gallo
  • Crumbled feta or cojita cheese (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Step 2

In a medium bowl, toss the patted dry chickpeas with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.

  3. Step 3

Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until crispy and lightly browned. Watch carefully to prevent burning.

  4. Step 4

While chickpeas are roasting, prepare the avocado sauce: Combine avocado, Greek yogurt, lime juice, and cilantro in a small food processor or blender. Blend until smooth and creamy. Add 1-2 tablespoons of water as needed to reach desired consistency. Season with salt to taste.

  5. Step 5

Warm tortillas according to package instructions (in a dry skillet, microwave, or oven).

  6. Step 6

Assemble tacos: Fill warm tortillas with shredded lettuce, crispy chickpeas, diced tomatoes (or pico de gallo), a drizzle of creamy avocado sauce, and optional cheese. Serve immediately.

Tips

  • Ensure chickpeas are very dry before seasoning and roasting for maximum crispiness.
  • For extra spice, add a pinch of cayenne pepper to the chickpea seasoning.
  • The avocado sauce can be made ahead and stored in the fridge for up to 2 days, but it's best made fresh.
