Ingredients

Yield: 3 servings

Main

  • 1 (15 oz) can chickpeas, rinsed and thoroughly dried
  • 1 head broccoli, cut into bite-sized florets
  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Optional: Fresh lemon wedges for serving

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a large bowl, combine the rinsed and dried chickpeas, broccoli florets, red bell pepper, and red onion wedges. Drizzle with olive oil.

  3. Step 3

Sprinkle with smoked paprika, cumin, garlic powder, salt, and black pepper. Toss well to ensure all the veggies and chickpeas are evenly coated.

  4. Step 4

Spread the seasoned chickpeas and vegetables in a single layer on the prepared baking sheet. Avoid overcrowding the pan; use two sheets if necessary for better crisping.

  5. Step 5

Roast for 25-30 minutes, tossing once halfway through, until the chickpeas are crispy and the vegetables are tender-crisp and slightly caramelized.

  6. Step 6

Serve hot, with a squeeze of fresh lemon juice if desired. This is delicious on its own, or served over rice or quinoa.

Tips

  • Thoroughly drying the chickpeas is key for getting them crispy in the oven.
  • Feel free to swap in other quick-cooking veggies like zucchini, asparagus, or cherry tomatoes.
  • Add a drizzle of tahini dressing or a sprinkle of fresh herbs after roasting for extra flavor.
