  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 1/2 cups vegetable broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • 5 oz fresh spinach
  • Salt and freshly ground black pepper to taste
  • Optional: Crusty bread for serving

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.

    Stir in minced garlic and chopped sun-dried tomatoes. Cook for 2 minutes until fragrant.

    Add rinsed beans and vegetable broth to the skillet. Bring to a simmer and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
