  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 (16 oz) package potato gnocchi
  • 2 cups fresh spinach, roughly chopped
  • Salt and black pepper to taste
  • Fresh basil, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease and remove sausage to a plate, leaving a little bit of fat in the pan.

    Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and chopped sun-dried tomatoes and cook for another minute until fragrant.

    Stir in diced tomatoes (with their juice) and chicken broth. Bring to a simmer, then reduce heat to medium-low and let simmer for 5-7 minutes to allow flavors to meld.

  4. Step 4

    Stir in heavy cream and grated Parmesan cheese. Return cooked sausage to the pan. Season with salt and pepper to taste. Bring the sauce back to a gentle simmer.

  5. Step 5

    Add gnocchi directly to the simmering sauce and cook according to package directions, typically 2-3 minutes, or until they float to the surface. Stir in fresh spinach and cook until wilted, about 1-2 minutes.

  6. Step 6

    Serve hot, garnished with extra Parmesan and fresh basil, if desired.

  • Don't overcook the gnocchi – they cook very quickly! Watch for them to float to the top, then they're ready.
