  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil, chopped, plus more for garnish
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Cook rigatoni according to package directions until al dente. Reserve 1 cup pasta water, then drain.

  2. Step 2

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain excess fat and set sausage aside.

    Add the chopped onion to the same skillet and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.

    Pour in the crushed tomatoes and bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally, to allow flavors to meld.

    Stir in the heavy cream, Parmesan cheese, and cooked sausage. Add the cooked rigatoni. Toss to coat everything, adding a splash or two of reserved pasta water if the sauce is too thick.

  6. Step 6

    Stir in the fresh basil and season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan and basil.
