Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot), casings removed
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz short pasta (such as penne, rotini, or farfalle)
- ½ tsp dried oregano
- ¼ tsp red pepper flakes (optional)
- Salt and black pepper to taste
- ¼ cup grated Parmesan cheese, plus more for serving
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease if desired.
Step 2
Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic, oregano, and red pepper flakes (if using), and cook for another minute until fragrant.
Step 3
Pour in the diced tomatoes (undrained), tomato sauce, chicken broth, and heavy cream. Stir well to combine. Bring the mixture to a gentle simmer.
Step 4
Add the uncooked pasta to the skillet, stirring to submerge it in the liquid. Reduce the heat to medium-low, cover the skillet, and simmer for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
Step 5
Remove the skillet from the heat. Stir in the Parmesan cheese until melted and creamy. Taste and season with salt and black pepper as needed.
Step 6
Garnish with fresh parsley, if desired, and serve hot with extra Parmesan cheese on the side. Enjoy your comforting one-pan pasta!
Tips
- Don't skip stirring the pasta occasionally to prevent it from sticking to the bottom of the pan.
- If the sauce gets too thick before the pasta is cooked, add a splash more broth or water.
- Feel free to add a handful of fresh spinach during the last few minutes of cooking for added greens.
