  • 1 lb Italian sausage (mild or hot, casing removed)

  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Preparation

  1. Step 1

    Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

    Add chopped onion to the skillet with the sausage and cook until softened, about 3-5 minutes. Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.

    Pour in the crushed tomatoes. Bring to a simmer, then reduce heat and let it cook for 10 minutes, allowing the flavors to meld.

    Stir in the heavy cream and Parmesan cheese until well combined and heated through. Add the drained pasta to the sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.

    Season with salt and pepper to taste. Serve hot, garnished with fresh basil or parsley and extra Parmesan cheese.
