- 12 oz pasta (penne, rigatoni, or fettuccine work well)
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup reserved pasta water
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/2 tsp dried oregano
- Salt and black pepper to taste
Preparation
Step 1
Cook pasta according to package directions in salted water. Before draining, reserve about 1 cup of pasta water. Drain the pasta and set aside.
Step 2
While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.

Add minced garlic and dried oregano, cook for another minute until fragrant.

Pour in the crushed tomatoes and bring to a simmer. Reduce heat to low and stir in the heavy cream. Season with salt and pepper.
Step 5
Add the cooked pasta, fresh spinach, and 1/4 cup of the reserved pasta water to the sauce. Toss until the spinach has wilted and the pasta is well coated. Add more pasta water if the sauce is too thick.
Step 6
Stir in the Parmesan cheese until melted and creamy. Serve hot, garnished with extra Parmesan if desired.
Tips
- For a little heat, add a pinch of red pepper flakes to the sauce along with the garlic.
- If you don't have heavy cream, milk or half-and-half can be used, but the sauce will be less rich.
