  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 8 oz pasta (such as penne, rotini, or farfalle)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Cook pasta according to package directions until al dente. Drain and set aside.

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

    Reduce heat to medium. Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.

    Stir in the heavy cream and grated Parmesan cheese. Return the cooked chicken to the skillet. Season with salt and pepper to taste. Simmer for 2-3 minutes, until the sauce is slightly thickened and heated through.

    Add the cooked pasta to the skillet and toss to combine, ensuring all the pasta is coated in the creamy sauce. Serve immediately, garnished with fresh parsley and extra Parmesan, if desired.
