  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 cup shredded mozzarella cheese
  • Salt and fresh black pepper to taste

Preparation

  1. Step 1

    Preheat oven to 375°F (190°C). Cook pasta according to package directions, draining 2 minutes before al dente (it will finish cooking in the oven).

    While pasta cooks, heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain excess fat.

    Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, oregano, and red pepper flakes (if using) and cook for 1 minute until fragrant.

    Pour in crushed tomatoes, heavy cream, and broth. Bring to a simmer, then reduce heat to low and let it gently simmer for 5-7 minutes, allowing flavors to meld.

    Stir in the drained pasta and 1/2 cup Parmesan cheese. Mix well to combine everything in the sauce. Taste and adjust seasoning with salt and pepper.

  6. Step 6

    Top the pasta mixture evenly with shredded mozzarella cheese and a sprinkle of extra Parmesan. Transfer the skillet to the preheated oven.

    Bake for 15-20 minutes, or until the cheese is melted and bubbly and the sauce is hot. If desired, broil for the last 2-3 minutes for extra golden-brown cheese. Let stand for a few minutes before serving.
