Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1/2 tsp dried oregano
- Pinch of red pepper flakes (optional)
- Salt and black pepper to taste
- 12 oz pasta (penne, linguine, or spaghetti work great)
- Fresh basil, chopped, for garnish
Preparation
Step 1
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
Step 2
While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and cook for 30 seconds until fragrant (do not brown).
Step 3
Pour in crushed tomatoes. Stir in oregano, red pepper flakes (if using), salt, and pepper. Bring the sauce to a gentle simmer, then reduce heat to low and cook for 10-15 minutes, stirring occasionally, to allow flavors to meld.
Step 4
Stir in heavy cream and grated Parmesan cheese until well combined and heated through. Taste and adjust seasoning as needed.
Step 5
Add drained pasta directly to the sauce. Toss to coat evenly. If the sauce seems too thick, add a splash or two of the reserved pasta water until desired consistency is reached.
Step 6
Serve immediately, garnished with fresh basil and extra Parmesan cheese.
Tips
- For a little extra protein, stir in cooked chicken or Italian sausage with the pasta.
- A knob of butter added to the sauce with the cream can make it extra silky.
