Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1 (16 oz) package potato gnocchi (shelf-stable)
  • 1/2 cup heavy cream (or half-and-half)
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or basil, chopped, for garnish

Preparation

  1. Step 1

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

  2. Step 2

Stir in minced garlic and cook for 1 minute more until fragrant. Be careful not to burn the garlic.

  3. Step 3

Pour in the crushed tomatoes and vegetable broth. Add dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a gentle simmer.

  4. Step 4

Add the gnocchi to the simmering soup. Cook according to package directions, usually 2-4 minutes, or until the gnocchi float to the surface and are tender.

  5. Step 5

Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring occasionally, until the soup is heated through and slightly thickened. Do not boil once cream is added.

  6. Step 6

Season with salt and pepper to taste. Ladle into bowls, garnish with fresh parsley or basil, and serve with extra Parmesan cheese.

Tips

  • For a richer flavor, you can sauté some diced pancetta or bacon before adding the onion.
  • Add a handful of fresh spinach or kale at the end for extra greens.
  • Serve with crusty bread for dipping and soaking up all that delicious broth.
