- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28-oz) can crushed tomatoes
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and black pepper to taste
- 12 oz pasta (penne, rigatoni, or fettuccine work well)
- 1/4 cup grated Parmesan cheese, plus more for serving
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

While pasta cooks, heat olive oil in a large skillet or pot over medium-high heat. Add chicken pieces and cook for 5-7 minutes, until browned and cooked through. Remove chicken from skillet and set aside.

Add chopped onion to the same skillet and cook for 3-5 minutes until softened. Add minced garlic and cook for another minute until fragrant.

Stir in crushed tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a simmer, then reduce heat to low and cook for 10-15 minutes, allowing flavors to meld.

Stir in the heavy cream and grated Parmesan cheese. Add the cooked chicken and pasta to the sauce. Toss everything together, adding a splash of reserved pasta water if the sauce is too thick. Heat through for 1-2 minutes. Serve hot, garnished with fresh parsley and extra Parmesan, if desired.
